Treat yourself or others with the recipe of these delicious pumpkin cookies below. They are not only healthy, but also delicious and simple to make!
1 small pimple pumpkin
400 g self-raising flour
1,5 tsp 5 spices powder
1 tsp vanilla extract
150 g unsalted soft butter
180 g fine sugar
powdered sugar for dusting
Preheat the oven to 150 degrees.
Cut the pumpkin in half. Take out the pips. Place in the oven with the skin side up on baking paper. Remove from the oven after an hour. Peel off the skin and puree. Turn the oven temperature to 170 degrees.
Mix the pumpkin puree together with the butter, egg yolks, flour and sugar. Make heaps with an ice cream scoop greased with sunflower oil. Place them on a baking tray lined with baking paper. Leave enough space between the cookies. Brush the tops of the cookies with the beaten egg whites.
Place in the oven for 20 minutes. Then let the cookies cool on a wire rack and sprinkle with the icing sugar.
