Spicy cod with spicy carrots

Cod with coconut, chili pepper, mint and lime
For 2 people
Ingredients
2 garlic cloves
4 tbsp coconut grater
1 fresh red chili pepper
handful of fresh mint leaves
juice of 2 limes
1 tsp sea salt (coarse flakes)
2 cod fillets (or another firm, white fish)
Preparation
Preheat the oven to 200 degrees.
Finely chop the red chilli, mint, coconut and garlic. Mix the lime juice, 1 tbsp oil and sea salt into a red-green paste.
Drizzle a baking dish with a drizzle of olive oil. Place the fish fillets in the dish and press the coconut-chili-mint mixture on each fillet.
Bake in the oven for 15-20 minutes until the fish is cooked through and the crust is crispy.
Roasted carrot with cumin and coriander
For 2 people
Ingredients
500 g rainbow carrot mix
1 tbsp olive oil
1 tsp cumin seeds
sea salt and pepper
handful of fresh coriander as a garnish
Preparation
Preheat the oven to 200 degrees.
Scrub or peel the carrot mix if necessary.
Cut the carrots diagonally.
Mix the carrot with the olive oil, cumin and salt and pepper.
Place the carrots in a baking dish and cover with aluminium foil, put them in the oven for 30 minutes.
Remove the foil and leave them in the oven for another 15 minutes without foil.
At that time, you can put the dish with cod fillets in the oven. Then you serve them together, with coriander over the carrots.
